Cream of Spinach Soup

Cream of Spinach Soup




Ingredients                       Amount

Flour                                        20 gm                  
Butter                                      20 gm
Puree Spinach                         60 ml
Chicken Stock                         600 ml
Milk                                         200 ml
Salt                                          as required
Pepper                                     as required
Cream                                      15 ml



Methods:

Ø  Heat butter in to thick bottom pan.
Ø  Add flour and cook until sandy texture.
Ø  Add cold stock. Simmer 20 minutes very slow.
Ø  Add puree spinach and cook.
Ø  Add milk.
Ø  Add salt and pepper.
Ø  Add cream.
Ø  Served hot garnish with cream.



Note: Chicken stock will simmer 2 hours. Blanch spinach boiling water and drain water and then puree with help of blender.

For four Portion
Ingredients                                        Amounts
Flour                                                      20 gm
Butter                                                   20 gm
Pumpkin purees                                100 ml
Onion Slice                                           20 gm
Carrots                                                  20 gm
Bay leaf                                                                   4 no                                                                   
Milk                                                       750 ml
Cream                                                   15 ml
Salt and pepper                                to test

Methods:
Add butter in to a thick button pan add flour stair till sandy texture. Add milk.
Add Pumpkin purees, Onion Slice, Slice Carrots, and Bay leaf cook for half hour.
&Add Salt and pepper add cream. Served hot. Garnish with Cream.
     



Chicken Nuggets

Chicken Nuggets
For four Portion
Ingredients                                        Amounts
Chicken mince                                   200gm
Oregano                                              2 gm
WC sauce                                            2-3 drop
Bread crumbs                                    100 gm
Egg                                                         4 no
Pepper                                                 3 gm
Salt                                                         T.T
Fat                                                          for fry
Method:
Ø  Take chicken mince in to a bowl, add Oregano, WC sauce, Pepper and Salt.
Ø  Make a small ball and dip into egg and roll in to breadcrumbs.
Ø  Keep aside and deep fry. 
For innovative or make a change, ginger, garlic, and cashew nut paste can be used.

There are number of ways to classify catering establishments in the world of catering industries. Generally catering establishments can be divided into following two types.

Primary of Commercial Catering

These are the establishments whose main aim is to earn profit by providing food and beverage to the guests as per their demand. Hence, they are also referred as commercial catering, establishments. Such as hotels, restaurants, fast food outlets, bars, pubs, etc.

Secondary or Welfare Catering
these are the establishments that provide food and beverage as a part of another business. Their aim is not to earn money. Instead, the establishments are there to provide welfare services at affordable prices, such as industrial canteens, hospital canteens, school/college canteens, railways caterings, airline caterings, ship or cruise lines, etc. The quality and the quantity of the food should be equally good, through this type of menu offered in this type of catering might be different from another.

Ingredients:

Flour    2 1/2 cups
White or brown sugar  2 cup
Cocoa    6 tablespoons
Baking soda    2 teaspoon
Salt, optional    1/2 teaspoon
Olive oil 10 tablespoons
White vinegar    2 tablespoon
Vanilla extract    1 teaspoon
Cold water    2 cup

Methods :
  • Preheat oven to 350 degrees F.
  • In a bowl, combine flour, sugar, cocoa, baking soda, and salt; mix well.
  • Make hole, pour the oil, pour the vinegar, pour the vanilla
  • Pour the water into the bowl, over all.
  • Mix the wet and dry ingredients together until there are no lumps and pour into an baking pan, 2 inches deep.
  • Bake for about 30 minutes

Chocolate Cake Recipe 
Ingredients:

Cocoa powder 2cup
Boiling water 4 cups
Butter, softened 2 cup (2 sticks)
Cups sugar 4-1/2
Eggs 8
Flour 4-3/4 cups
Baking soda 3 teaspoons
Baking powder 1 teaspoon
Salt 1  teaspoon
Vanilla extract 1 teaspoons

  • Preheat oven to 350 degrees F.
  • Grease and dust flour cake pans.
  • In a medium bowl, stir the boiling water into the cocoa until smooth, keep aside.
  • Take another bowl, combine the flour, baking soda, baking powder and salt, and put aside.
  • Cream the butter and sugar with electric mixer,
  • Add the eggs, one at a time, beat very  well,
  • Add the flour mixture to the cocoa mixture, start and ending with the flour mixture.
  • Add vanilla and Stir well, and do not over-beat.
  • Pour an equal amount of batter into prepared pans.
  • Bake for 20 to 25 minutes .

Spice Cookies

Ingredients
Flour 120 gm
Cinnamon 2 gm
Ginger 5 gm
Cloves 2 gm
Baking powder 2 gm
Sugar 120 gm
Salt to taste
Butter 60 gm
Egg 1 no

Methods

Mix flour, cinnamon, ginger, cloves, and baking powder. 
Add sugar and butter and mix well, then add beat in the egg. 
Add the dry ingredients mixture, mixing well. 
Divide into two pieces,
Wrap and leave to chill for 1 hour. 
Roll out each dough piece form a large rectangle. 
Cut into 24 small triangles. 
Put cookies on a buttered baking sheet.  Bake in a pre-heated oven (350°F.) for 10 minutes.

Austrian Bread Dumplings

Ingredients:
Bread  4 slice
Butter 20 ml
Egg     1 no
Milk    30 ml
Flour 40 gm
Seasoning to taste
Herbs parsely 1 spring
 Methods:
Fry bread and mix all ingredients very nicely.
Make in to soft dough. And make 12 to 16 small balls. Take rest for ½ an hour.
Put little balls into the boiling salted water or the soup. Poach them for 15 minutes and risen well.
