Cream of Spinach Soup

Cream of Spinach Soup




Ingredients                       Amount

Flour                                        20 gm                  
Butter                                      20 gm
Puree Spinach                         60 ml
Chicken Stock                         600 ml
Milk                                         200 ml
Salt                                          as required
Pepper                                     as required
Cream                                      15 ml



Methods:

Ø  Heat butter in to thick bottom pan.
Ø  Add flour and cook until sandy texture.
Ø  Add cold stock. Simmer 20 minutes very slow.
Ø  Add puree spinach and cook.
Ø  Add milk.
Ø  Add salt and pepper.
Ø  Add cream.
Ø  Served hot garnish with cream.



Note: Chicken stock will simmer 2 hours. Blanch spinach boiling water and drain water and then puree with help of blender.
